
Dutch Oven Roast Chicken with a Texas-style Rub
In my recipe, Dutch Oven Roast Chicken with a Texas-style rub, I’m honoring a family tradition. A key element in this recipe is the Texas-style rub that I’ll be using to season the chicken. It originated with my in-laws and we use the rub on all of our poultry dishes. Even though our family is in Texas, we remember them when we use this special rub on our Thanksgiving Turkey or on Dutch Oven chicken.
Dutch Oven Cooking: A Family Tradition
For some, cooking is about honoring long held family traditions. For example, we all have special dishes we share with family on special occasions like birthdays and holidays. However, cooking is also about sharing love and appreciation for friends and family. Do you have stories about special meals you shared with your family?
My favorite dish is my mom’s lasagne. She made it for me each and every birthday I can remember. To this day, my mom knows how much I love her lasagna, so, every time I see her, she makes lasagne for me. ABSOLUTE HEAVEN! My love of lasagne; though, is only part of the story. My mom bakes lasagne because she loves me and it’s her way of showing it. I’m blessed that I have such a wonderful mom.
Oftentimes, we find ourselves separated from our loved ones — either by distance or because they have left us for their eternal journey. As consequence, cooking becomes a way of keeping our loved ones close by, of honoring them, and carrying on our family traditions.

- 12 inch Dutch Oven Deep (8 quart)

Ingredients: Dutch Oven Roast Chicken
- 12 inch Dutch Oven Deep (8 quart)
- 1 whole fryer chicken (4 1/2 to 5 lbs.)
- meat thermometer
- 1 large, yellow onion
- 1 red and 1 yellow pepper chopped (coarsely)
- 3 carrots, chopped
- 3 celery sticks, chopped
- 1 cup orange juice
- 1 cup carbonated water
- 1/2 stick butter (thinly sliced pats)
- 3 tbsp poultry rub
Dutch Oven: Step-by-Step Instructions
Dutch Oven Roast Chicken with a Texas-style Rub is an incredibly easy recipe to make. The instructions follow below.
Slice one large onion and place it it on the bottom of the Dutch Oven. The onion functions like trivet protecting the bottom of chicken while cooking.

Place chicken on top of the onions in the dutch oven.

Season the chicken with your preferred poultry rub. I sprinkled the seasoning on the chicken and rubbed it into the skin of the bird because the skin was already moist after washing.

Chop vegetables (coarsely), stuff the chicken with the veggies, and place them around the chicken inside the oven.

Add liquid. For instance, I used a mixture of sparkling water and orange juice to give a citrusy flavor and preserve moisture while cooking.

Top seasoned chicken with pats of butter.
